Blueberry Peach Muffins
1/4 cup butter, softened
1/3 cup sugar
1 egg
1 1/4 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
1/2 cup peach yogurt
2/3 cup blueberries, fresh or frozen (if using frozen, don't thaw before adding)
1 tsp orange peel, grated
coarse sugar
In a small bowl, cream butter and sugar until light and fluffy.
Beat in egg.
Combine flour, baking powder, salt, and baking soda.
Add to creamed mixture, alternating with yogurt, beating well after each addition.
Fold in blueberries and orange peel.
Fill 9 paper-lined muffin cups 3/4 full.
Sprinkle with coarse sugar.
Bake at 375F for 20-25 minutes or until toothpick comes out clean.
Serve warm.
